What about focusing more on an individual dog and to take pictures with the camera close to the ground, a little like from a dog's perpective?

You could take pictures of someone luring a dog into a sit, down, stand etc, or even luring them into a heel position. You could take pictures of the different stages.

Do you believe it would be better to appear in the photo only his/her feet and close up to the dog or a photo from a distance with the person and dog?

Sophia, I think it would be better to have the dog and trainer together showing the behavior. Is this one picture at the beginning of each chapter or several pictures showing the steps of the behavior?

I think with a lot of people in a photo, it takes away the focus. Instead of concentrating on one thing, they see too many different scenarios.

I like the one of the dog jumping on the guy. Shows clearly what the photo is telling the viewer.

Maybe for the group photos of the dogs, get in closer. As in make the expressions of the dogs easier to see :)

I think that the picture should have just the trainer and the dog. A view from the side would be best. I think a series of shots would be ideal. Showing the dog going from a stand to a sit and also showing the body position of the trainer.
