I have a Canon PowerShot S200 digital camera. There are so many cameras and so many add ons. If I wanted something better with lenses etc, not something cheap and not too expensive as I'm not that experienced. What would be the next step? Do I work my way up? Olly with all your experience now with cameras and accessories you would probably know what the best camera would be.. I know there will always be better and newer. With all your experience whats next?

I know people that start with one and then say I should have got that one with that lense and end up with too many cameras and accessories they don't use..

As Mandy said, what do you mostly want to do with your next camera? And what's not "too expensive"? :)
It is hard to give advices without knowing what you are exactly looking for.
On BW you have people asking for the best camera, but it is like asking for the best car: A Ferrari might be the best sport car if you don't have kids but with 5 kids a MiniVan might be "the best" for you ;)

If it is all about photo quality/autofocus speed etc the best is a digital SLR. They are expensive, heavy and good lenses cost a lot. They also cannot take movies. You don't get to see a preview of the photo. The LCD is only for seeing photos AFTER they were taken.
Below them, you have the bridge cameras (like the Canon Pro1, Minolta A200, Sony 828 etc). They have a good range in zoom and can do almost everything correctly or even well. They can take movies too. They are a compromise, a kind of all in one camera. The viewfinder is a little lcd screen.

thx guys, I see what you mean. Olly re cameras that take movies, is it better to get a camera and just a camera and if you want a cam corder to get a cam corder? Like these tv's that come with a vcr in them ,I'm told its better to buy a vcr and a tv seperately.

Yes. Well I was talking about movies, it was about the all in ones etc. It's a compromise, they don't do everything perfectly but they still can do.

It is still far from a camcorder!
