I just purchased the Canon Rebel and need a larger memory card. Do the different types really make a difference and if so what are they?

I think there is no difference for the Rebel and Rebel XT, I am not sure. If there is a difference, you would see the difference in continuous mode when the camera's buffer is full.
I have several types of compact flash (from normal to hi-speed) and I see no difference.
